I am trying to buy Shiny Red Apples from Are Fourwaves. Her merchant screen indicates I should get 20 apples, but I'm only getting 2 each time I buy.

I'm getting 20 when buying. Do you have more than 1000? If so the last number will be cut off so it looks like only 100.

Yup verified i'm getting a stack of 20 when I bought them also
