From the original game, once they respawned, you could click them again, even if you already clicked that one. You could just stand in one spot and keep clicking it as it respawned and finish the quest that way. So I don't think you need to keep track of who clicked what.
There were very few instances in game where you couldn't click the same thing twice (Unfortunately, I can't think of any right now).
Also attackable workbenches? lol, crafting PVP!

actually, yes, the despawning takes care of that issue. Good!
I just need to have the icon add back on when it respawns if a character still needs it.

Zippy, I believe in EQ2 we had a Lua function "respawn(NPC)" to handle any special circumstances if an NPC was coming into the world as a respawn vs chunk startup. In most cases, it simply called "spawn(NPC)" again, but could come in handy for things like this.
